  • ½ tsp onion powder

For the Salad:

  • 4 cups romaine lettuce, chopped
  • ½ cup tomatoes, diced
  • ½ cup cucumber, sliced
  • ½ avocado, diced
  • ⅓ cup red onion, slivered

For the Honey Mustard Dressing:

  • 3 tbsp Dijon mustard
  • ½ tsp whole grain Dijon mustard
  • 3 tbsp honey
  • 1 tsp apple cider vinegar
  • Dash of sea salt

Instructions

  • Prepare the Chicken Tenders:
    In a bowl, mix breadcrumbs with sea salt, Italian seasoning, paprika, garlic powder, and onion powder.
    Whisk the egg in a separate bowl.
    Pat chicken tenders dry and remove excess liquid.
    Dip each chicken tender in the egg, then coat it in the breadcrumb mixture.
  • Air Fry the Chicken:
    Preheat the air fryer to 350°F (175°C).
    Place the breaded chicken tenders in the air fryer basket, ensuring they don’t overlap.
    Cook for 14 minutes, flipping halfway through, until crispy and cooked through.
  • Prepare the Salad:
    Arrange the romaine lettuce, tomatoes, cucumber, red onion, and avocado on two plates or bowls.
  • Make the Honey Mustard Dressing:
    In a small bowl, whisk together Dijon mustard, whole grain Dijon mustard, honey, apple cider vinegar, and a dash of sea salt.
  • Assemble and Serve:
    Place the air-fried chicken tenders on top of the salad greens.
    Drizzle with the honey mustard dressing.
