This Avocado Mango Salad is a vibrant, refreshing mix of creamy avocado, sweet mango, and crunchy vegetables. Tossed in a light olive oil-lime dressing, it’s the perfect side dish or light lunch for any occasion!

Ingredients

  • 1 large ripe avocado, diced
  • 1 large ripe mango, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 small cucumber, diced
  • 2 tbsp fresh cilantro, chopped

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lime juice (fresh)
  • 1 tsp honey (optional)
  • Salt and pepper, to taste

For Garnish (Optional):

  • Feta cheese, crumbled
  • Fresh cilantro leaves

Instructions

  • Prepare the Salad:
    • In a large bowl, combine the diced avocado, mango, cherry tomatoes, red onion, cucumber, and chopped cilantro.
  • Make the Dressing:
    • In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and pepper until well combined.
  • Combine & Toss:
    • Pour the dressing over the salad and gently toss to coat the ingredients evenly.
  • Garnish & Serve:
    • Sprinkle with crumbled feta cheese and fresh cilantro leaves, if desired.
