2 overripe bananas, mashed
1 cup (2 sticks) unsalted butter, softened
⅓ cup packed brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
¼ cup toasted chopped walnuts or pecans (optional)
In a large bowl, beat the softened butter with an electric mixer until light and fluffy, about 2–3 minutes.
Add mashed bananas and continue mixing until incorporated. (It may look slightly curdled at first—keep mixing!)
Mix in brown sugar, vanilla extract, cinnamon, nutmeg, and salt. Beat until smooth and well blended.
Gently fold in nuts if using.
Transfer to airtight jars or containers.
Refrigerate for at least 2 hours before serving to allow flavors to meld.
