This easy Banana Bread Pudding is warm, comforting, and naturally sweetened with honey and ripe bananas. With chunks of dark chocolate and a soft, custard-like texture, this dish is perfect for breakfast or dessert!
2 tbsp coconut oil (for greasing)
3 medium bananas, mashed
3 large eggs
2 cups milk of choice (dairy or non-dairy)
½ cup honey
2 tsp vanilla extract
1 bread loaf, cubed (preferably day-old)
3.5 oz dark chocolate, chopped
1 medium banana, sliced
1. Preheat & Prep:
Preheat oven to 350°F (175°C).
Grease a baking dish with coconut oil.
2. Make the Custard Base:
In a large bowl, mash the bananas.
Add eggs, milk, honey, and vanilla extract. Whisk until smooth and well combined.
3. Assemble:
Stir in the bread cubes and half of the chopped dark chocolate. Mix gently to coat.
Pour the mixture into the greased baking dish.
Top with banana slices and sprinkle with the remaining dark chocolate.
4. Bake & Serve:
Bake for 30-35 minutes, or until the top is golden brown and the pudding is set.
