Banana Bread Pudding

This easy Banana Bread Pudding is warm, comforting, and naturally sweetened with honey and ripe bananas. With chunks of dark chocolate and a soft, custard-like texture, this dish is perfect for breakfast or dessert!

Ingredients

  • 2 tbsp coconut oil (for greasing)

  • 3 medium bananas, mashed

  • 3 large eggs

  • 2 cups milk of choice (dairy or non-dairy)

  • ½ cup honey

  • 2 tsp vanilla extract

  • 1 bread loaf, cubed (preferably day-old)

  • 3.5 oz dark chocolate, chopped

  • 1 medium banana, sliced

Instructions

1. Preheat & Prep:

  • Preheat oven to 350°F (175°C).

  • Grease a baking dish with coconut oil.

2. Make the Custard Base:

  • In a large bowl, mash the bananas.

  • Add eggs, milk, honey, and vanilla extract. Whisk until smooth and well combined.

3. Assemble:

  • Stir in the bread cubes and half of the chopped dark chocolate. Mix gently to coat.

  • Pour the mixture into the greased baking dish.

  • Top with banana slices and sprinkle with the remaining dark chocolate.

4. Bake & Serve:

 

  • Bake for 30-35 minutes, or until the top is golden brown and the pudding is set.

  • Serve warm and enjoy!

Notes

  • Best enjoyed fresh but can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving.

  • For extra crunch, add chopped nuts like walnuts or pecans.

  • Substitute honey with maple syrup for a different flavor.

 

  • Serve with a drizzle of warm caramel sauce or a scoop of vanilla ice cream for an indulgent treat!
