These Banana Split Cheesecakes are the perfect combination of a rich banana cheesecake base and all the fun flavors of a classic banana split, complete with ice cream, whipped cream, and colorful toppings!

For the Crust:

  • 1 1/2 cups vanilla wafer crumbs
  • 5 tbsp salted butter, melted
  • 2 tbsp sugar

For the Cheesecake Filling:

  • 16 oz (2 blocks) cream cheese, room temperature
  • 3/4 cup sugar
  • 1 tbsp all-purpose flour
  • 1/2 cup sour cream, room temperature
  • 1 tsp banana extract
  • 1/2 cup mashed banana (about 1 medium banana)
  • 2 large eggs, room temperature

For the Toppings:

  • 1 scoop chocolate ice cream
  • 1 scoop strawberry ice cream
  • 1 scoop vanilla ice cream (optional)
  • Whipped cream
  • Chocolate syrup
  • Caramel sauce
  • Chopped nuts
  • Maraschino cherries
  • Rainbow sprinkles

Instructions

  • Prepare the Crust:
    Preheat oven to 325°F (163°C). Line a 12-cup muffin tin with cupcake liners.
    In a bowl, mix vanilla wafer crumbs, melted butter, and sugar until combined.
    Divide the mixture evenly among the liners, pressing down firmly to form the crust.
    Bake for 5-7 minutes, then remove from the oven and let cool.
  • Make the Cheesecake Filling:
    In a large bowl, beat cream cheese and sugar until smooth.
    Mix in flour, sour cream, banana extract, and mashed banana until well combined.
    Add eggs one at a time, mixing on low speed just until incorporated.
  • Bake the Cheesecakes:
    Divide the filling evenly over the cooled crusts.
    Bake for 18-22 minutes, or until the centers are set but slightly jiggly.
    Turn off the oven, crack the door open slightly, and let the cheesecakes cool inside for 10 minutes.
    Remove and let cool completely at room temperature, then chill in the refrigerator for at least 2 hours.
  • Assemble the Banana Split Toppings:
    Once the cheesecakes are chilled, use an ice cream scoop to add chocolate and strawberry ice cream scoops on top.
    Drizzle with chocolate syrup and caramel sauce.
    Add whipped cream, chopped nuts, sprinkles, and maraschino cherries on top.
