- 1 pound salmon fillet, skinless and boneless, cut into 1-inch cubes
- 1/2 cup cornstarch
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cooking oil, for frying or air frying
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon honey or sugar
- Chopped chives or green onions, for garnish
Instructions
- Preheat oven to 400°F, air fryer to 390°F, or heat oil in a skillet over medium-high heat.
- In a bowl, toss salmon cubes with garlic powder, salt, and pepper.
- Dredge each piece in cornstarch, coating thoroughly.
- Place salmon in the oven, air fryer, or skillet and cook until golden and crisp. Bake for 15 minutes flipping halfway, air fry for 10–12 minutes, or pan fry 2–3 minutes per side.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey.
- Toss cooked salmon bites in the sauce until well coated.
- Garnish with chopped chives and serve immediately.
Notes
- Dry salmon well before coating for maximum crispiness.
- Adjust sriracha to make it more or less spicy.
- Serve over rice, in tacos, or with salad for a full meal.
- Store leftovers in the fridge and reheat in air fryer for best texture.
