  • 12 ounces rotini pasta
  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta
    Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions (9-11 minutes) until al dente. Reserve 1 cup of the pasta water before draining.
  • Brown the Beef
    While the pasta cooks, heat the olive oil or butter in a large skillet over medium-high heat. Add the ground beef, breaking it up with a spatula. Cook for 5-7 minutes until browned and cooked through. Drain excess fat if necessary and set aside.
  • Sauté the Garlic
    In the same skillet, add the minced garlic and sauté over medium heat for 1 minute, stirring constantly until fragrant. Be careful not to burn the garlic.
  • Create the Sauce
    Sprinkle the flour over the beef and garlic mixture, stirring to combine. Gradually add the milk, stirring to avoid lumps. Bring to a simmer and cook for 2-3 minutes until the sauce thickens.
  • Add the Cheese and Seasoning
    Stir in the grated Parmesan cheese, Italian seasoning, salt, and pepper. Cook for an additional 1-2 minutes until the cheese is fully melted and the sauce is creamy.
  • Combine the Pasta and Sauce
    Add the drained rotini to the skillet, tossing to coat with the sauce. If the sauce is too thick, add reserved pasta water a tablespoon at a time until you reach the desired consistency.
  • Garnish and Serve
    Sprinkle freshly chopped parsley over the dish. Serve immediately.

Notes

  • You can swap the ground beef for ground turkey or chicken for a lighter version.
  • Feel free to use any type of pasta you prefer. Rotini works well for holding onto the creamy sauce, but penne, fusilli, or even spaghetti would work too.
  • For an extra rich flavor, consider using heavy cream instead of milk.
