Biscoff Banana Pudding with Dulce de Leche is a luscious dessert combining spiced Biscoff cookies, ripe bananas, creamy vanilla pudding, rich dulce de leche, and light whipped cream. Layered to perfection, it offers a delightful balance of textures and flavors, ideal for any occasion and easy to prepare ahead.

Ingredients

Base Ingredients

  • Biscoff Cookies – 200g (about 1 1/2 cups) crushed and whole for layering
  • Ripe Bananas – 3 medium, peeled and sliced into 1/4 inch rounds
  • Dulce de Leche – 1 cup, smooth and ready to drizzle

Pudding

  • Vanilla Pudding Mix (instant or homemade) – equivalent to 4 servings
  • Milk – 2 cups (for preparing the pudding mix)

Topping

  • Whipped Cream – 1 cup, freshly whipped

Instructions

  1. Prepare the Vanilla Pudding: Mix the vanilla pudding according to package instructions or your homemade recipe, using 2 cups of milk. Once smooth and creamy, chill in the refrigerator for 10-15 minutes until slightly thickened.
  2. Slice the Bananas: Peel and slice ripe bananas into approximately quarter-inch rounds. This thickness keeps them delicate yet sturdy enough to maintain their shape within the pudding layers.
  3. Layer the Ingredients: In a serving dish, start with a layer of whole Biscoff cookies. Spoon a generous layer of pudding over the cookies, then add a layer of banana slices followed by a drizzle of dulce de leche. Repeat these layers until ingredients are used, finishing with a pudding layer on top.
  4. Add Whipped Cream and Dulce de Leche: Spread a thick layer of freshly whipped cream over the final pudding layer. Drizzle additional dulce de leche on top and sprinkle crushed Biscoff cookies for added crunch.
  5. Chill and Serve: Cover the pudding and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and cookies to soften to a perfect texture before serving.

Notes

  • Choose really ripe bananas for maximum sweetness and softness without mushiness.
  • Be generous with dulce de leche between layers to enhance the caramel richness.
  • Preparing the pudding a day ahead improves flavor melding and softens cookies perfectly.
  • Use freshly whipped cream for a lighter and fresher finish rather than pre-whipped toppings.
  • Crush Biscoff cookies by hand to create varied textures in the layering process.
