This moist and flavorful Blueberry Banana Bread combines the sweetness of ripe bananas with the burst of juicy blueberries for a delightful treat. Perfect for breakfast, snacks, or any time you crave a homemade baked good.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed (about 1 cup)

 

  • 1 1/4 cups blueberries

Instructions

  • Preheat the oven to 350°F (175°C). Prepare a 9×5-inch bread pan by greasing with cooking spray.
  • Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream Butter and Sugar: Using an electric mixer, beat the butter and sugar together until light and fluffy, about 2 minutes.
  • Add Wet Ingredients: Add eggs, milk, and vanilla to the butter-sugar mixture. Mix until well combined. Then, beat in the mashed bananas.
  • Combine Wet and Dry: With the mixer on low speed, gradually add the flour mixture until just combined.
  • Fold in Blueberries: Use a spatula to gently fold in the blueberries.
  • Bake: Pour the batter into the prepared loaf pan. Bake for 55-60 minutes or until a tester comes out clean. If the top is getting too brown before it’s cooked through, cover with foil and continue baking.

 

  • Cool: Remove the bread from the oven and allow it to cool for 15 minutes before removing it from the pan.

Notes

  • Make sure your bananas are very ripe for the best sweetness and moisture.

 

  • If you prefer, you can substitute the blueberries with other berries or add nuts for extra crunch.
