Blueberry Banana Bread

Ingredients

  • 3 large ripe bananas
  • 1 cup fresh blueberries
  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 0.5 cups melted butter
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 0.25 teaspoons salt

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan
  2. In a large bowl, mash bananas and whisk in melted butter, sugar, egg, and vanilla.
  3. Sift flour, baking soda, and salt together, then fold into the wet mixture
  4. Gently fold in the blueberries and pour batter into the prepared pan
  5. Bake for 50 to 60 minutes or until a toothpick comes out clean
  6. Cool in the pan for 10 minutes before transferring to a wire rack
  7. Slice and serve warm

Notes

  • Toss blueberries in a little flour to prevent them from sinking
  • Do not overmix the batter to ensure a light texture
  • Use very dark, spotted bananas for maximum sweetness
