- 3 large ripe bananas
- 1 cup fresh blueberries
- 1.5 cups all-purpose flour
- 0.75 cups granulated sugar
- 0.5 cups melted butter
- 1 large egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 0.25 teaspoons salt
Instructions
- Preheat oven to 350°F and grease a 9×5 inch loaf pan
- In a large bowl, mash bananas and whisk in melted butter, sugar, egg, and vanilla.
- Sift flour, baking soda, and salt together, then fold into the wet mixture
- Gently fold in the blueberries and pour batter into the prepared pan
- Bake for 50 to 60 minutes or until a toothpick comes out clean
- Cool in the pan for 10 minutes before transferring to a wire rack
- Slice and serve warm
Notes
- Toss blueberries in a little flour to prevent them from sinking
- Do not overmix the batter to ensure a light texture
- Use very dark, spotted bananas for maximum sweetness
