Ingredients

Scale
  • 2 cups low-fat cottage cheese (small curd)
  • 2 large eggs
  • 1 ½ cups rolled oats
  • 1 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)
  • ½ cup milk (can use almond milk or other dairy-free options)
  • ¼ cup honey or maple syrup (to sweeten)
  • 1 ½ cups fresh blueberries (or frozen, thawed)
  • ½ cup chopped nuts (optional, such as almonds or walnuts)
  • 1 tablespoon butter (for greasing the baking dish)
  • )

Instructions

  • Preheat the oven:
Preheat your oven to 350°F (175°C). Grease an 8×8-inch or similar-sized baking dish with butter or non-stick spray.

  • Prepare the wet ingredients:
In a large mixing bowl, whisk together the cottage cheese, eggs, milk, honey (or maple syrup), vanilla extract, and cinnamon (if using) until smooth.

  • Add the dry ingredients:
Stir in the rolled oats and baking powder into the wet mixture, ensuring the oats are well coated.

  • Add the blueberries:
Gently fold in the blueberries and, if desired, the chopped nuts. Be careful not to break the blueberries.

  • Assemble the bake:
Pour the mixture into the prepared baking dish and spread it evenly.

  • Bake:
Bake in the preheated oven for 35-40 minutes, or until the top is lightly golden, and a toothpick inserted into the center comes out clean. The texture should be set but still moist.

  • Serve:
Let the breakfast bake cool slightly before serving. You can enjoy it warm or at room temperature.

Notes

  • If you don’t have fresh blueberries, you can use frozen blueberries—just be sure to thaw and drain them first.
  • You can substitute maple syrup for honey or adjust the sweetness to your liking.
  • For a more decadent version, top with a dollop of Greek yogurt or a drizzle of maple syrup before serving.
