Cabbage Beef Bake is a warm and hearty dish that’s perfect for the whole family. Featuring ground beef, tender cabbage, tomatoes, rice, and melted cheddar cheese, it’s a comforting, budget-friendly one-dish meal. It’s easy to make, full of flavor, and perfect for busy weeknights.

For the Cabbage Beef Bake:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cups cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • In a large skillet, brown the ground beef with the chopped onion over medium heat for 5-7 minutes, until the beef is fully browned and the onions are translucent. Drain any excess fat.
  • Stir in the garlic powder, salt, and black pepper into the beef mixture.
  • Layer half of the chopped cabbage in the bottom of the prepared baking dish. Spread the beef mixture over the cabbage, followed by a layer of cooked rice.
  • Pour the undrained diced tomatoes over the rice, spreading them evenly.
  • Top with the remaining cabbage and pour beef broth evenly over the entire dish. Cover with aluminum foil and bake for 45 minutes.
  • After 45 minutes, remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for 10-15 minutes, or until the cheese is melted and bubbly.

Notes

  • Allow the dish to cool for a few minutes before serving to allow the layers to set.
  • Feel free to add more vegetables such as bell peppers or zucchini to the beef mixture for added flavor and nutrition.
  • This dish makes great leftovers, and it can be reheated in the microwave or oven.
