Instructions
- Mix graham cracker crumbs and melted butter until combined, then press into the bottoms of small cups or jars.
- Beat softened cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream until soft peaks form, then fold into the cream cheese mixture.
- In a saucepan, cook diced apples with brown sugar and cinnamon over medium heat for 8–10 minutes until tender. Let cool.
- Layer cheesecake filling over the crust, drizzle caramel, then spoon on the cooled apple mixture. Repeat layers if space allows.
- Top each cup with a final drizzle of caramel and a sprinkle of cinnamon if desired.
- Chill in the fridge for at least 2 hours before serving.
