- 2 large leeks, trimmed and thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach, roughly chopped
- 8 ounces cream cheese, softened
- ½ cup sour cream
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup shredded mozzarella cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C). Set out an oven-safe dish.
- In a large skillet over low heat, warm olive oil and add sliced leeks. Cook for 10 to 15 minutes until golden and soft. Add garlic and stir for 1 more minute.
- While leeks cook, stir together cream cheese, sour cream, salt, pepper, and Parmesan in a large bowl.
- Stir in wilted spinach and caramelized leeks into the cream mixture until fully combined.
- Transfer mixture to the prepared baking dish. Top with mozzarella if using.
- Bake uncovered for 20 minutes or until hot and bubbly.
- Let the dip rest for 5 minutes before serving. Garnish with fresh herbs or extra cheese if desired.
- Serve warm with chips, toasted baguette slices, or veggie sticks.
Notes
- Use full-fat cream cheese at room temperature for best results.
- Thaw and squeeze frozen spinach if using as a substitute.
- Make ahead and reheat when ready to serve.
- Try adding crushed red pepper for a spicy twist.
