Ingredients

- 2 cups all-purpose flour
- ¾ cup Greek yogurt
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons olive oil
- 3 large red onions, thinly sliced
- 1 tablespoon butter
- 150 grams goat cheese
- 2 tablespoons chives, chopped (optional)
- Black pepper, to taste
Instructions
- In a mixing bowl, combine flour, baking powder, and salt. Stir in yogurt and olive oil until a dough forms. Knead for 2–3 minutes until smooth.
- Heat olive oil and butter in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook for 20–25 minutes until golden and caramelised. Let cool.
- Divide dough into 4 pieces and roll into circles. Spread caramelised onions and crumbled goat cheese on half of each circle. Sprinkle with black pepper and chives if using. Fold over and seal edges.
- Place folded flatbreads onto a preheated skillet. Cook 2–3 minutes per side until golden brown and crisp with melted cheese inside.
- Let cool slightly, slice, and serve warm.

- Caramelise onions slowly for maximum sweetness and flavor.
- Serve immediately for the best texture and melty cheese.
- Store leftovers in an airtight container and reheat in a skillet for crispiness.
