  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • Fresh parsley, for garnish

Instructions

  1. Preheat Your Equipment: Heat a large Dutch oven or heavy-bottomed pot over medium-high heat.
  2. Combine Ingredients: Add olive oil and sear the beef cubes until browned. Remove and set aside. Sauté onions, garlic, and bell peppers until soft.
  3. Prepare Your Cooking Vessel: Add carrots, potatoes, sweet potatoes, and browned beef into the pot.
  4. Assemble the Dish: Stir in chopped tomatoes, beef broth, bay leaf, oregano, paprika, salt, and pepper.
  5. Cook to Perfection: Cover and simmer on low heat for 45 to 60 minutes until everything is tender.
  6. Finishing Touches: Add corn and simmer for 5 more minutes. Adjust seasoning and discard bay leaf.
