  • 1/2 cup warm water
  • 1/2 cup unsalted butter, softened
  • 2 large eggs

Cream Cheese Swirl

  • 8 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Add-ins

  • 1 1/2 cups freshly grated carrots (finely grated)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Prepare the Dough: Mix fresh yeast with warm water and a pinch of sugar to activate it. In a large bowl, combine flour, granulated sugar, brown sugar, and spices. Add softened butter, eggs, and vanilla extract, then mix in the activated yeast mixture. Knead the dough until smooth and elastic. Cover and let rise in a warm place until doubled, about 1 to 1.5 hours.
  2. Make the Cream Cheese Swirl: While the dough is rising, blend softened cream cheese with sugar, vanilla extract, and cinnamon until smooth and creamy. Set aside.
  3. Add Carrots and Nuts: Gently fold the finely grated carrots and chopped nuts (if using) into the risen dough to distribute evenly, adding moisture and texture.
  4. Roll and Shape: Roll the dough out into a large rectangle on a floured surface. Spread the cream cheese mixture evenly over the dough, leaving a small border. Starting from the long side, tightly roll the dough into a log. Slice into individual pieces about 1.5 inches thick. Place each piece into a greased muffin tin cup, spiral side up, to create the cruffin shape.
  5. Final Rise and Bake: Allow the shaped cruffins to rise briefly, about 20-30 minutes, until slightly puffy. Preheat the oven to 350°F (175°C). Optionally, brush the tops with an egg wash for a glossy finish. Bake for 20-25 minutes or until golden brown and cooked through. Remove and cool slightly before serving.
