- 1 cup rolled oats
- 1 cup Medjool dates, pitted
- 1 cup finely grated carrots
- 1/2 cup shredded coconut, plus extra for coating
- 1/4 cup almond butter
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Add rolled oats and pitted dates to a food processor and pulse until crumbly.
- Transfer to a mixing bowl if needed.
- Add grated carrots, almond butter, maple syrup, cinnamon, nutmeg, vanilla extract, and salt.
- Mix until the mixture becomes sticky and well combined.
- Roll into small bite-sized balls.
- Coat each ball in shredded coconut.
- Chill in the refrigerator for 20 minutes before serving.
Notes
- Use soft dates for easier blending.
- Chill mixture if too sticky before rolling.
- You can substitute almond butter with peanut butter.
