Carrot Cake Energy Balls

Soft and naturally sweet carrot cake energy balls packed with oats, dates, warm spices, and coated in coconut for a healthy no-bake snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup Medjool dates, pitted
  • 1 cup finely grated carrots
  • 1/2 cup shredded coconut, plus extra for coating
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Add rolled oats and pitted dates to a food processor and pulse until crumbly.
  2. Transfer to a mixing bowl if needed.
  3. Add grated carrots, almond butter, maple syrup, cinnamon, nutmeg, vanilla extract, and salt.
  4. Mix until the mixture becomes sticky and well combined.
  5. Roll into small bite-sized balls.
  6. Coat each ball in shredded coconut.
  7. Chill in the refrigerator for 20 minutes before serving.

Notes

  • Use soft dates for easier blending.
  • Chill mixture if too sticky before rolling.
  • You can substitute almond butter with peanut butter.
