- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 1 carrot, finely diced
- 1 celery stalk, diced
- 3 garlic cloves, minced
- 1 pound ground beef
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 1 cup vegetable broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 12 ounces casarecce pasta
- Fresh basil leaves for garnish
- 2 tablespoons butter
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute.
- Add ground beef and cook until browned. Stir in tomato paste, crushed tomatoes, and vegetable broth. Season with Italian seasoning, salt, and pepper. Simmer for 30-40 minutes.
- Bring a large pot of salted water to a boil and cook casarecce pasta until al dente. Drain and set aside.
- Stir butter and fresh basil into the sauce. Adjust seasoning as needed.
- Toss pasta with the sauce or serve plated with extra basil.
- Enjoy warm and serve with optional grated Parmesan or crusty bread.
Notes
- Simmering the sauce longer enhances flavor and thickens the texture.
- Reserve a splash of pasta water to loosen the sauce if needed.
- Use freshly grated Parmesan for extra richness if desired.
