Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 12 ounces casarecce pasta
  • Fresh basil leaves for garnish
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute.
  2. Add ground beef and cook until browned. Stir in tomato paste, crushed tomatoes, and vegetable broth. Season with Italian seasoning, salt, and pepper. Simmer for 30-40 minutes.
  3. Bring a large pot of salted water to a boil and cook casarecce pasta until al dente. Drain and set aside.
  4. Stir butter and fresh basil into the sauce. Adjust seasoning as needed.
  5. Toss pasta with the sauce or serve plated with extra basil.
  6. Enjoy warm and serve with optional grated Parmesan or crusty bread.

Notes

  • Simmering the sauce longer enhances flavor and thickens the texture.
  • Reserve a splash of pasta water to loosen the sauce if needed.
  • Use freshly grated Parmesan for extra richness if desired.
