- 1 large flour tortilla (10 inches)
- 1 pound ground beef
- 5 large eggs
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup diced tomato
- 1/4 cup diced onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F and lightly grease a pie dish.
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- In a bowl whisk together eggs, milk, salt, and black pepper.
- Press the flour tortilla into the pie dish forming a crust.
- Spread cooked beef evenly over the tortilla.
- Add diced onion and diced tomato.
- Pour the egg mixture over the filling.
- Sprinkle shredded cheddar cheese evenly on top.
- Bake for 30 minutes until the center is set and the top is golden.
- Allow to rest for 5 minutes before slicing and serving.

- Let the quiche rest before slicing so it holds its shape.
- Freshly shredded cheese melts smoother than pre shredded varieties.
- You can substitute ground turkey for a lighter option.
