  • 2 medium yellow squash or zucchini 🟡
  • 1 cup shredded cheese (cheddar, parmesan, or a mix) 🧀
  • 1/2 tsp garlic powder 🧄
  • 1/2 tsp paprika (optional) 🌶️
  • Salt & pepper to taste 🧂
  • 1 tbsp olive oil 🫒

Instructions

  • Preheat your oven to 400°F (200°C).
  • Slice the squash into 1/4-inch rounds.
  • Toss the squash slices with olive oil, garlic powder, salt, and pepper.
  • Arrange the slices on a baking sheet lined with parchment paper.
  • Sprinkle shredded cheese evenly over each squash round.
  • Bake for 12-15 minutes, or until the cheese is bubbly and golden.
