- 4 ounces cream cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons mayonnaise
- 1/4 cup milk or heavy cream

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives or green onions
- Optional: pinch of red pepper flakes
Instructions
- Melt butter in a large skillet over medium heat.
- Add corn kernels and sauté for 2–3 minutes until warmed through.
- Stir in cream cheese, cheddar cheese, mayonnaise, milk, garlic powder, salt, and pepper. Mix until smooth and fully melted.
- Cook for another 5–7 minutes, stirring occasionally, until creamy and bubbly.
- Top with chopped chives and optional red pepper flakes. Serve hot.
Notes
- Use freshly grated cheese for best melt and flavor.
- Drain corn thoroughly if using canned.
- Add a touch of cayenne or jalapeños for extra heat.
- Broil for 1–2 minutes for a golden top if desired.
