  • ½ medium onion, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Cook and shred the chicken: Boil or bake the chicken breasts until fully cooked. Shred the chicken using two forks or a hand mixer, then season with salt and pepper.
  2. Sauté the onions: In a medium skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Prepare the sauce: In a large saucepan, combine the cream of chicken soups, cream of mushroom soup, and the undrained can of Rotel. Heat over medium heat, stirring occasionally, until the mixture is warmed through. Add the sautéed onions and stir to combine. Season with salt and pepper to taste.
  4. Assemble the casserole: Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  5. Layer the ingredients:
    • Spread a thin layer of the soup mixture at the bottom of the baking dish.
    • Layer half of the crushed Doritos over the soup.
    • Sprinkle with half of the shredded cheese.
    • Layer the shredded chicken evenly on top of the cheese.
    • Pour the remaining soup mixture over the chicken.
    • Top with the remaining crushed Doritos.
  6. Top with cheese: Sprinkle the remaining shredded cheese evenly over the Doritos.
  7. Bake: Cover the baking dish with aluminum foil and bake for 25 minutes.
