Cheesy Kimchi

A bold and comforting noodle dish combining tangy kimchi with rich melted cheese and a silky egg on top.

Ingredients

  • 2 packs instant noodles
  • 1 cup chopped kimchi
  • 2 tablespoons kimchi juice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons sliced green onions

Instructions

  1. Cook noodles according to package instructions and reserve some cooking water.
  2. Heat sesame oil in a pan and sauté garlic until fragrant.
  3. Add kimchi and kimchi juice, then cook briefly.
  4. Add cooked noodles and soy sauce, mixing well.
  5. Add a splash of reserved noodle water and stir.
  6. Top with cheese and let it melt over low heat.
  7. Cook eggs sunny side up and place on top.
  8. Garnish with green onions and serve hot.

Notes

  • Use well-fermented kimchi for stronger flavor
  • Freshly grated cheese melts better
  • Serve immediately for best texture
