- 4 slices sourdough or white bread
- 1 cup shredded mozzarella cheese
- 4 tablespoons pesto
- 2 tablespoons softened butter
- Optional: handful of arugula or spinach (for serving)
Instructions
- Preheat your air fryer to 375°F (190°C).
- Spread pesto on one side of two slices of bread.
- Top with shredded mozzarella, then place the remaining bread slices on top to form sandwiches.
- Butter the outer sides of each sandwich.
- Place the sandwiches in the air fryer basket. If needed, work in batches.
- Cook for 5–6 minutes, flipping halfway, until golden and cheese is melted.
- Let rest for a minute, then slice and serve warm with arugula if desired.
Notes
- Use thick bread slices to prevent sogginess.
- Don’t overstuff with cheese or pesto to avoid overflow.
- Add chili flakes or garlic powder to boost flavor.
