Cheesy Pesto Air Fryer Toastie

A golden, melty cheesy pesto toastie made effortlessly in the air fryer. Crispy on the outside, gooey on the inside, and packed with fresh, herby flavor in every bite.

Ingredients

  • 4 slices sourdough or white bread
  • 1 cup shredded mozzarella cheese
  • 4 tablespoons pesto
  • 2 tablespoons softened butter
  • Optional: handful of arugula or spinach (for serving)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Spread pesto on one side of two slices of bread.
  3. Top with shredded mozzarella, then place the remaining bread slices on top to form sandwiches.
  4. Butter the outer sides of each sandwich.
  5. Place the sandwiches in the air fryer basket. If needed, work in batches.
  6. Cook for 5–6 minutes, flipping halfway, until golden and cheese is melted.
  7. Let rest for a minute, then slice and serve warm with arugula if desired.

Notes

  • Use thick bread slices to prevent sogginess.
  • Don’t overstuff with cheese or pesto to avoid overflow.
