  • 2 large potatoes, peeled and boiled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cooked bacon
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying

Instructions

  • Mash Potatoes: In a mixing bowl, mash the boiled potatoes until smooth.
  • Mix Ingredients: Add shredded cheddar cheese, chopped green onions, chopped bacon, sour cream, salt, and pepper to the mashed potatoes. Mix well until combined.
  • Shape Patties: Scoop about 2 tablespoons of the potato mixture and shape it into a patty. Repeat with the remaining mixture.
  • Coat Patties: Dredge each patty in all-purpose flour, dip in beaten eggs, and coat with breadcrumbs.
  • Heat Oil: Heat vegetable oil in a skillet over medium heat.
  • Fry Patties: Fry the patties for about 3-4 minutes on each side, or until golden brown.
  • Drain Patties: Remove patties from the skillet and drain on paper towels.
  • Serve: Serve hot with extra green onions and a dollop of sour cream.

Notes

  • For a lighter option, you can bake the patties instead of frying them.
  • You can also swap out the cheddar for another type of cheese, like mozzarella or Monterey Jack.
  • If you prefer more crispy texture, you can increase the breadcrumbs on the patties.
