These Chicken and Cheese Pastry Rolls are a delicious, flaky appetizer or main course, packed with tender, spiced chicken and melted mozzarella cheese. For the Chicken Filling:

  • 1 pound boneless, skinless chicken thighs, minced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 jalapenos, seeded and diced
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ginger powder
  • 12 tablespoons chipotle adobo paste (optional)
  • 12 tablespoons finely chopped cilantro
  • 1 cup shredded mozzarella cheese (plus more for topping)

Other:

  • 1 package puff pastry
  • 1 large egg, whisked with 2 tablespoons milk (for egg wash)
  • Sesame seeds (for topping)

Instructions

  • Make the filling: In a skillet over medium heat, sauté the diced jalapenos and garlic in olive oil and butter until fragrant. Add the minced chicken, spices, and chipotle adobo paste (if using). Cook until the chicken is browned and fully cooked through. Stir in the cilantro and mozzarella cheese until the cheese melts and the mixture is combined.
  • Assemble the rolls: Preheat the oven to 400°F (200°C). Cut the puff pastry sheets into four equal pieces. Brush the edges of the pastry with the egg wash. Place a generous amount of the chicken filling on one side of each pastry piece, fold over, and press the edges to seal.
  • Bake: Place the rolls on a parchment-lined baking sheet. Brush the tops of the rolls with the egg wash, make slits on top for ventilation, and sprinkle with sesame seeds. Bake for 20-25 minutes or until the rolls are golden brown and cooked through.
  • Enjoy: Let the rolls cool for a few minutes before serving. For extra flavor, consider adding a layer of grated Parmesan cheese inside the filling.

Notes

  • If you prefer a milder filling, reduce or omit the jalapenos and chipotle adobo paste.
  • For extra richness, you can add grated Parmesan cheese to the filling alongside the mozzarella.
