  • 1/2 whole chicken (or 23 chicken thighs)
  • 300g courgettes (2 large), thinly sliced
  • 10g fresh chives, finely chopped
  • 10g fresh parsley, finely chopped
  • 200g full-fat cream cheese
  • 1 tbsp Dijon mustard
  • 1 sheet chilled puff pastry
  • 1 egg, beaten
  • 1 tsp black sesame seeds (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cook the chicken in boiling water for about 20 minutes or until fully cooked. Shred the chicken once cooled.
  3. In a pan, heat olive oil and sauté the sliced courgettes until caramelized and soft. Season with salt and pepper.
  4. In a bowl, mix shredded chicken, caramelized courgettes, cream cheese, Dijon mustard, chopped chives, and parsley.
  5. Roll out the puff pastry and cut into rectangles (about 4×6 inches).
  6. Place a generous spoonful of filling on one side of each rectangle, then fold over to form a pasty. Seal edges by pressing with a fork.
  7. Brush each pasty with beaten egg and sprinkle with black sesame seeds.
  8. Bake for 20-25 minutes or until golden brown and puffed.
  9. Allow to cool slightly before serving.

Notes

  • You can substitute chicken thighs with cooked leftover chicken.
  • For a vegetarian version, replace chicken with cooked mushrooms or lentils.
  • Ensure pastry edges are well sealed to prevent leaking.
  • Serve with a fresh salad or chutney for extra flavor.
