This Chicken Bruschetta Casserole combines tender chicken, a flavorful tomato-basil topping, and melted cheese, all baked into a cheesy, comforting dish. It’s perfect for a weeknight dinner or meal prep, and guaranteed to be a crowd-pleaser.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Sear the chicken for 2-3 minutes on each side until browned, then transfer to a baking dish.
  2. In a mixing bowl, combine the diced cherry tomatoes, fresh basil, balsamic vinegar, olive oil, garlic, salt, and pepper. Stir to combine and set aside.
  3. Spoon the bruschetta topping evenly over the seared chicken breasts. Sprinkle shredded mozzarella and grated Parmesan over the top.
  4. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  5. Serve warm and enjoy! Optionally garnish with extra basil or balsamic glaze.

Notes

  • For a healthier version, you can use a reduced-fat mozzarella or a plant-based cheese.
  • If you want to make this ahead of time, prepare the chicken and bruschetta topping separately and assemble just before baking.
