These Chicken Gyro Bowls bring all the classic gyro flavors together in a healthy and delicious bowl. Marinated chicken, fluffy rice, fresh veggies, and a tangy tzatziki sauce make for the ultimate Mediterranean-inspired meal. Perfect for dinner, meal prep, or a quick weeknight meal!

For the Chicken Marinade:

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 3 tbsp olive oil
  • 3 tbsp plain Greek yogurt
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Rice Base:

  • 1 1/2 cups white rice
  • 3 cups chicken broth or water
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried dill
  • Salt and pepper, to taste

For Toppings:

  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • Fresh parsley or dill, for garnish
  • Lemon wedges

Instructions

  • Marinate the Chicken:
    In a bowl, mix olive oil, Greek yogurt, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
    Add chicken strips, toss to coat, and marinate for at least 20 minutes (or longer for more flavor).
  • Cook the Rice:
    Rinse rice under cold water until the water runs clear.
    In a pot, heat olive oil over medium heat. Add rice, oregano, garlic powder, and salt. Stir for 1 minute to toast the rice.
    Add chicken broth or water, bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, then remove from heat and let sit for 5 minutes before fluffing.
  • Make the Tzatziki Sauce:
    In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper.
    Mix well and refrigerate until ready to use.
  • Cook the Chicken:
    Heat a skillet over medium-high heat. Add marinated chicken and cook for 4-5 minutes per side, until browned and cooked through.
  • Assemble the Bowls:
    Divide rice into 4 bowls.
    Top with cooked chicken, cherry tomatoes, red onion, cucumber, feta, and olives.
    Drizzle with tzatziki sauce and garnish with fresh parsley or dill and lemon wedges.
    Serve immediately and enjoy!

Notes

  • You can substitute ground chicken or lamb for the chicken strips if preferred.
  • For a more authentic gyro flavor, consider serving with pita on the side.
  • You can make the tzatziki sauce ahead of time and store it in the fridge for up to 2-3 days.
