  • 1 (32 oz) bag frozen hashbrowns (shredded or diced)
  • 2 cups cooked, shredded chicken (rotisserie works great!)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 cup milk
  • 1/4 cup melted butter

Topping:

  • 1 cup crushed Ritz crackers (or cornflakes)
  • 2 tablespoons melted butter

Instructions

  • Preheat Oven:
    Set oven to 375°F (190°C) and grease a 9×13 baking dish.
  • Make the Creamy Mixture:
    In a large bowl, whisk together cream of chicken soup, sour cream, milk, melted butter, garlic powder, onion powder, salt, black pepper, and paprika.
    Stir in shredded chicken and 1 cup of shredded cheddar cheese.
  • Assemble the Casserole:
    Add frozen hashbrowns to the bowl and mix until evenly coated.
    Spread the mixture into the greased 9×13 dish.
    Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  • Prepare the Topping:
    In a small bowl, mix crushed crackers with melted butter.
    Sprinkle evenly over the casserole for a crispy topping.
  • Bake:
    Cover with foil and bake for 30 minutes.
    Remove foil and bake for an additional 15-20 minutes, until bubbly and golden brown on top.
  • Serve & Enjoy:
    Let cool for 5-10 minutes before serving.
    Garnish with fresh parsley or a dollop of sour cream if desired.

Notes

  • For a lighter version, swap sour cream for Greek yogurt.
  • You can make this dish ahead of time and refrigerate it, then bake it when ready.
  • If you don’t have Ritz crackers, crushed cornflakes work just as well for the topping.
