- 2 tablespoons olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 1 cup fresh spinach
Instructions
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, parmesan, parsley, salt, and pepper.
- Mix gently until just combined and form into small meatballs.
- Heat olive oil in a skillet over medium heat.
- Cook meatballs until browned on all sides and fully cooked through.
- In a saucepan, cook orzo in chicken broth until tender.
- Stir in spinach, lemon juice, and zest into the orzo.
- Serve meatballs over the orzo and garnish with parsley.
Notes
- Do not overmix the meatball mixture to keep them tender
- Add extra lemon juice for more brightness
- Reheat with a splash of broth to maintain moisture
