  • 1 cup fresh spinach

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, parmesan, parsley, salt, and pepper.
  2. Mix gently until just combined and form into small meatballs.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook meatballs until browned on all sides and fully cooked through.
  5. In a saucepan, cook orzo in chicken broth until tender.
  6. Stir in spinach, lemon juice, and zest into the orzo.
  7. Serve meatballs over the orzo and garnish with parsley.
