This light and refreshing Chicken Salad with Grapes is the perfect combination of tender chicken, crunchy nuts, crisp vegetables, and sweet grapes. Tossed in a creamy yogurt-mayo dressing with a hint of Dijon mustard, it’s ideal for sandwiches or served on a bed of greens.

Ingredients

  • 1/4 cup slivered almonds or walnuts (optional)
  • 1/4 cup + 1/8 cup light mayonnaise
  • 1/4 cup + 1/8 cup non-fat plain Greek yogurt
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • Freshly ground pepper to taste
  • 2 1/2 cups cooked chicken, shredded or diced
  • 2 tablespoons red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/2 cup grapes, halved
  • 1 1/2 tablespoons tarragon, chopped
  • 46 croissants or rolls of your choice

Equipment:

  • Mixing bowl
  • Small skillet (if using nuts)

Instructions

  • Toast Nuts (Optional):
    • If using nuts, toast them in a small skillet over medium heat for about 3 minutes, until fragrant. Allow them to cool completely.
  • Make the Dressing:
    • In a large bowl, combine the yogurt, mayonnaise, white wine vinegar, Dijon mustard, honey, and salt. Mix until smooth and well combined. Season with pepper and additional salt, to taste.
  • Combine Ingredients:
    • Add the chicken, red onion, celery, grapes, tarragon, and cooled nuts (if using) into the dressing. Toss gently to combine and adjust seasoning with salt and pepper, as needed.
  • Serve:

Notes
