Ingredients

  • 1 cup uncooked brown rice
  • 2 cups water
  • 2 medium bell peppers, sliced
  • 1 tablespoon olive oil
  • 2 teaspoons chipotle seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup guacamole
  • 2 small flour tortillas
  • 0.5 cup microgreens

Instructions

  1. Preheat the oven to 220°C and place a large skillet over medium heat.
  2. In a small bowl, combine chipotle seasoning, garlic powder, onion powder, salt, and black pepper.
  3. Toss the sliced bell peppers with olive oil and a pinch of salt, then spread them evenly on a baking sheet.
  4. Add ground beef to the skillet, sprinkle with the seasoning mixture, and cook while breaking it apart until browned and cooked through.
  5. Roast the peppers in the oven for 15 to 20 minutes until tender and lightly charred. At the same time, cook the brown rice with water according to package instructions.
  6. Fluff the rice gently with a fork and taste the beef, adjusting seasoning if needed.
  7. Assemble the bowls by layering rice, beef, roasted peppers, guacamole, folded tortillas, and microgreens. Serve warm.

Notes

  • Cook the rice slightly ahead of time to make assembly quicker.
  • Warm the tortillas briefly before serving for better texture.
  • Adjust the chipotle seasoning to control the level of heat.
