- 450 g ground beef
- 1 cup uncooked brown rice
- 2 cups water
- 2 medium bell peppers, sliced
- 1 tablespoon olive oil
- 2 teaspoons chipotle seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup guacamole
- 2 small flour tortillas
- 0.5 cup microgreens
Instructions
- Preheat the oven to 220°C and place a large skillet over medium heat.
- In a small bowl, combine chipotle seasoning, garlic powder, onion powder, salt, and black pepper.
- Toss the sliced bell peppers with olive oil and a pinch of salt, then spread them evenly on a baking sheet.
- Add ground beef to the skillet, sprinkle with the seasoning mixture, and cook while breaking it apart until browned and cooked through.
- Roast the peppers in the oven for 15 to 20 minutes until tender and lightly charred. At the same time, cook the brown rice with water according to package instructions.
- Fluff the rice gently with a fork and taste the beef, adjusting seasoning if needed.
- Assemble the bowls by layering rice, beef, roasted peppers, guacamole, folded tortillas, and microgreens. Serve warm.
Notes
- Cook the rice slightly ahead of time to make assembly quicker.
- Warm the tortillas briefly before serving for better texture.
- Adjust the chipotle seasoning to control the level of heat.
