Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- ¾ cup brown sugar
- 4 tablespoons unsalted butter (for caramel)
- 1 cup heavy cream, divided
- ½ teaspoon sea salt
- 1 cup dark chocolate (60-70% cacao), chopped
- 2 tablespoons crushed pretzels
- 2 tablespoons chopped roasted peanuts
- 1 tablespoon mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your tart pan.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until the texture resembles wet sand.
- Press the mixture into the tart pan, covering the bottom and sides. Chill for 10 minutes, then bake for 10 minutes and let cool.
- To make the caramel, combine brown sugar, 4 tablespoons butter, and ½ cup heavy cream in a saucepan. Simmer until thickened, about 5–7 minutes. Pour into the cooled crust and chill until set.
- Heat remaining ½ cup of cream until it simmers. Pour over chopped chocolate, let sit for a minute, then stir into a smooth ganache.
- Pour ganache over set caramel and chill for 2 hours until firm.
- Top with pretzels, peanuts, and chocolate chips before serving.
Notes
- Use high-quality chocolate for best flavor.
- Allow each layer to cool completely before adding the next to avoid mixing layers.
- A hot knife makes slicing easier and cleaner.
