Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • ¾ cup brown sugar
  • 4 tablespoons unsalted butter (for caramel)
  • 1 cup heavy cream, divided
  • ½ teaspoon sea salt
  • 1 cup dark chocolate (60-70% cacao), chopped
  • 2 tablespoons crushed pretzels
  • 2 tablespoons chopped roasted peanuts
  • 1 tablespoon mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your tart pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until the texture resembles wet sand.
  3. Press the mixture into the tart pan, covering the bottom and sides. Chill for 10 minutes, then bake for 10 minutes and let cool.
  4. To make the caramel, combine brown sugar, 4 tablespoons butter, and ½ cup heavy cream in a saucepan. Simmer until thickened, about 5–7 minutes. Pour into the cooled crust and chill until set.
  5. Heat remaining ½ cup of cream until it simmers. Pour over chopped chocolate, let sit for a minute, then stir into a smooth ganache.
  6. Pour ganache over set caramel and chill for 2 hours until firm.
  7. Top with pretzels, peanuts, and chocolate chips before serving.

  • Allow each layer to cool completely before adding the next to avoid mixing layers.
