Ingredients

Scale

Cookie Dough

  • 1 ¾ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Filling & Garnish

  • Chocolate hazelnut spread (e.g., Nutella), for filling
  • Chopped hazelnuts (optional), for rolling or garnish

Instructions

  1. Prepare the Dough: Cream the softened unsalted butter with sugar until light and fluffy. Beat in the egg yolk and vanilla extract. Sift together the all-purpose flour and cocoa powder, then gently fold the dry ingredients into the wet mixture until a consistent dough forms.
  2. Shape the Cookies: Chill the dough briefly to ease handling. Roll the dough into small balls about 1 inch in diameter and place them on a parchment-lined baking sheet with adequate spacing.
  3. Make Thumbprints: Using your thumb or the back of a small spoon, press gently into the center of each dough ball to create an indentation, being careful not to press all the way through.
  4. Bake the Cookies: Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, until edges are set and centers remain slightly soft.
  5. Add the Filling: When cookies are slightly cooled but still warm, spoon a dollop of chocolate hazelnut spread into each thumbprint to create a creamy center.

Notes

  • Use softened, not melted, butter for ideal dough texture.
  • Chill the dough to help cookies hold their shape while baking.
  • Use a cookie scoop for uniform cookie sizes and even baking.
  • Do not overfill thumbprints to prevent spilling during baking.
  • Use parchment paper to prevent sticking and simplify cleanup.
