These Chocolate No Bake Cookies are a perfect blend of rich cocoa, creamy peanut butter, and hearty oats—all without turning on the oven! Quick, easy, and irresistibly fudgy, they’re great for a last-minute dessert or snack.

Ingredients

  • ½ cup butter 🧈

  • 2 cups granulated sugar 🍬

  • ½ cup milk 🥛

  • ¼ cup cocoa powder 🍫

  • ½ cup creamy peanut butter 🥜

  • 3 cups quick oats 🌾

  • 1 teaspoon vanilla extract 🧂

Instructions

1. Prepare the Cookie Mixture

  1. In a saucepan over medium heat, melt the butter.

  2. Add the sugar, milk, and cocoa powder, stirring constantly.

2. Boil the Mixture

  1. Bring to a rolling boil and boil for 1 full minute, stirring continuously.

3. Mix in Peanut Butter & Oats

  1. Remove from heat and stir in peanut butter and vanilla extract until smooth.

  2. Add the quick oats and stir until evenly coated.

4. Shape & Set the Cookies

  1. Drop spoonfuls of the mixture onto parchment paper or a silicone mat.

  2. Let the cookies set at room temperature for 30–45 minutes until firm.

5. Serve & Store

 

  1. Enjoy immediately or store in an airtight container at room temperature for up to one week.

Notes

  • For a firmer texture, refrigerate the cookies for 15 minutes after setting.

  • Swap peanut butter for almond butter or sunflower seed butter for a peanut-free version.

 

  • Want a chewier texture? Use old-fashioned oats instead of quick oats.
