  • 3 cups powdered sugar
  • 2 tsp vanilla extract
  • 2 ½ cups semi-sweet chocolate chips
  • 2 tbsp coconut oil (or shortening, for smooth melting)
  • Optional garnish: Crushed peanuts, sprinkles, or sea salt

Instructions

  • Make the Peanut Butter Mixture:
    • In a large mixing bowl, combine the creamy peanut butter, softened butter, powdered sugar, and vanilla extract.
    • Mix until the mixture is smooth and holds together like dough.
  • Shape the Balls:
    • Roll the mixture into small balls, about 1 inch in diameter.
    • Place the balls on a parchment-lined baking sheet.
    • Chill in the refrigerator for at least 30 minutes, or until firm.
  • Melt the Chocolate:
    • In a microwave-safe bowl, combine the chocolate chips and coconut oil.
    • Microwave in 20-30 second intervals, stirring between each, until fully melted and smooth.
  • Coat the Peanut Butter Balls:
    • Using a fork or dipping tool, dip each chilled peanut butter ball into the melted chocolate, ensuring it’s fully coated.
    • Gently tap off the excess chocolate and place the coated ball back onto the parchment-lined baking sheet.
    • If desired, sprinkle crushed peanuts, sprinkles, or sea salt on top before the chocolate sets.
  • Chill and Serve:
    • Refrigerate the chocolate-coated balls for 15-20 minutes, or until the chocolate is set.
    • Store in an airtight container in the fridge for up to 2 weeks (if they last that long!).
