  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 4 ounces semisweet chocolate, chopped

Instructions

  • Whisk the Dry Ingredients:
    In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.

  • Add Milk and Cream:
    Gradually add milk and heavy cream to the dry ingredients, whisking until smooth.

  • Cook the Mixture:
    Place the saucepan over medium heat, stirring constantly until the mixture starts to thicken and bubble.

  • Temper the Egg Yolks:
    In a separate bowl, whisk egg yolks. Slowly add a small amount of the hot mixture to temper the eggs, then return the egg mixture to the saucepan, stirring continuously for another 2 minutes.

  • Add Chocolate and Vanilla:
    Remove from heat and stir in chopped semisweet chocolate and vanilla extract until smooth.

  • Chill the Pudding:
    Pour the pudding into serving dishes and chill for at least 2 hours before serving.

Notes

  • For a silkier texture, strain the pudding before chilling to remove any lumps.
