8 slices soft white sandwich bread, crusts removed
4 oz cream cheese, softened
2 tablespoons powdered sugar
1 tablespoon brown sugar
1 teaspoon cinnamon
2 large eggs
1/4 cup milk
1/2 teaspoon vanilla extract
Pinch of salt
1/4 cup granulated sugar
1 teaspoon cinnamon
2 tablespoons butter, for frying
Instructions
In a bowl, mix cream cheese, powdered sugar, brown sugar, and cinnamon until smooth.
Flatten each slice of bread with a rolling pin. Spread about 1 tablespoon of filling over each slice, then roll tightly from one end to the other to form a log.
In a shallow dish, whisk together eggs, milk, vanilla, and a pinch of salt.
Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, letting the excess drip off. Place in the skillet seam-side down and cook until golden brown on all sides, turning as needed (about 4–5 minutes total).
In a small bowl, mix granulated sugar and cinnamon. While roll-ups are still warm, roll them in the cinnamon sugar to coat.
Serve warm with maple syrup or a cream cheese glaze if desired.

Use day-old bread for easier rolling and less tearing.
