Ingredients

Scale

For the Coconut Filling:

  • 2 cups shredded coconut (unsweetened or sweetened)
  • 1/2 cup sweetened condensed milk
  • 1/4 cup coconut cream (or heavy cream)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

For the Chocolate Coating:

  • 12 oz dark or milk chocolate, chopped (or chocolate chips)
  • 1 tbsp coconut oil or butter (for a glossy finish)

Instructions

Instructions:

  1. Make the Coconut Filling: In a bowl, mix the shredded coconut, sweetened condensed milk, coconut cream, vanilla, and salt until well combined. If the mixture is too sticky, refrigerate for 10-15 minutes to firm up.

  2. Shape the Coconut Mixture: Scoop out small portions and shape them into balls, bars, or ovals. Place them on a parchment-lined baking sheet and freeze for at least 30 minutes to firm up.

  3. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate with the coconut oil in 30-second intervals, stirring in between until smooth. Alternatively, melt using a double boiler.

  4. Dip in Chocolate: Using a fork or dipping tool, coat each coconut piece in melted chocolate, letting excess drip off. Place them back on the parchment paper.

  5. Set & Enjoy: Chill in the refrigerator for 10-15 minutes until the chocolate hardens. Store in an airtight container in the fridge for up to a week.

Notes

  • You can use dark, milk, or white chocolate for different flavor profiles.
  • If you prefer a firmer coconut filling, refrigerating the coconut balls longer before dipping will help.
  • These chocolates make great homemade gifts when packaged in decorative boxes or jars!
