Ingredients

  • 4 potatoes, peeled and diced
  • 1 cup cabbage, chopped
  • 1/2 cup green onions, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

 

  • 2 tablespoons butter

Instructions

  • In a large pot, melt butter over medium heat.
  • Add the green onions and cabbage, and sauté until softened (about 5-7 minutes).
  • Add the diced potatoes and broth, bringing the mixture to a boil.
  • Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  • Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender).
  • Stir in the heavy cream, then season with salt and pepper to taste. Heat the soup through.

 

  • Serve and enjoy!

Notes

  • For a thicker soup, use less broth or blend part of the soup and leave some potato chunks for texture.
  • You can add crispy bacon or cheese for extra flavor!

 

  • If you prefer a dairy-free version, use coconut milk or another non-dairy cream alternative.
