  • 1 cup cornbread mix
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1/4 cup shredded cheddar cheese (optional)

For the Honey Butter Syrup:

  • 1/4 cup honey
  • 2 tbsp unsalted butter
  • 1 tbsp maple syrup (optional)
  • Pinch of salt

Instructions

  • Prepare the Batter: In a medium bowl, whisk together the cornbread mix, buttermilk, egg, and melted butter until smooth. Stir in shredded cheddar cheese if desired.
  • Cook the Waffles: Preheat a mini waffle maker and lightly grease it with cooking spray. Spoon about 1 tablespoon of batter into each section and cook for 3-4 minutes until golden brown. Repeat with the remaining batter.
  • Make the Syrup: In a small saucepan over low heat, combine honey, butter, maple syrup (if using), and a pinch of salt. Stir until the butter melts and the mixture is smooth. Remove from heat.
  • Serve: Arrange the waffle bites on a platter and drizzle with warm honey butter syrup. Serve immediately and enjoy!
