Ingredients

Scale

For the Cake:

  • 8 oz cream cheese, softened
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For the Glaze (optional):

  • 1/4 cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. Beat the Cream Cheese: In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue beating until fully combined.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be cautious not to overmix.
  6. Bake: Pour the batter into the prepared springform pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Cool: Let the cake cool completely in the pan on a wire rack before removing the sides of the pan.
  8. Make the Glaze (optional): In a small bowl, whisk together the powdered sugar and milk or cream until smooth.
  9. Glaze the Cake (optional): Drizzle the glaze over the cooled cake.

Tips & Variations:

  • For a Richer Flavor: Use full-fat cream cheese for a creamier texture.
  • Add-Ins: Mix in 1 cup of chopped nuts, 1/2 cup of chocolate chips, or 1 cup of fresh or frozen berries for added flavor and texture.
  • No-Bake Option: Omit the baking step and chill the cake in the refrigerator for at least 4 hours, or until it sets completely.

Notes

  • For a Richer Flavor: Use full-fat cream cheese for a creamier texture and more luxurious flavor.
  • Add-Ins: Feel free to mix in 1 cup of chopped nuts (like walnuts or pecans), 1/2 cup of chocolate chips, or 1 cup of fresh or frozen berries to elevate the flavor and texture of the cake.
  • No-Bake Option: If you prefer a no-bake version, skip the oven step. Simply refrigerate the cake for at least 4 hours or until it has set completely for a delicious chilled treat.
  • Storage: Store any leftover cake in an airtight container in the fridge for up to 3 days. If refrigerated, allow it to come to room temperature before serving for the best texture.
