Ingredients
- Pasta (penne or your choice) – 300g
- Broccoli florets – 200g
- Heavy cream – 200ml
- Tomato paste – 3 tbsp
- Garlic cloves, minced – 3
- Olive oil – 2 tbsp
- Grated Parmesan cheese – 50g
- Salt and pepper – to taste
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente.
- In a medium saucepan, heat olive oil over medium heat and sauté garlic until fragrant.
- Stir in tomato paste and heavy cream to create a smooth pink sauce.
- Blanch or steam broccoli florets until bright green and tender.
- Drain pasta and combine with the pink sauce in the saucepan, gently folding in broccoli.
- Heat together for 2-3 minutes so pasta absorbs flavors.
- Sprinkle grated Parmesan on top and season with salt and pepper to taste.
- Serve warm and enjoy immediately.
Notes
- Use freshly grated Parmesan for the best flavor.
- Reserve a bit of pasta water to loosen sauce if needed.
- Gently stir sauce to prevent separation.
