Pasta: 8 oz rotini pasta (or any short pasta of choice).
Protein: 1 lb shrimp (peeled and deveined), 1 lb chicken breast (diced).
Seasonings: 2 tbsp Cajun seasoning, 1 tsp smoked paprika, ½ tsp red pepper flakes (optional), ½ tsp salt (adjust to taste).
Sauce: 1 tbsp olive oil, 2 tbsp unsalted butter, 3 cloves garlic (minced), 1 cup heavy cream, 1 cup milk, ½ cup grated Parmesan cheese, ½ cup shredded cheddar cheese.
Garnish: Fresh parsley, chopped.
Cook Pasta: In a large pot of salted boiling water, cook pasta until al dente. Drain and set aside.
Season Protein: Season shrimp and chicken with 1 tbsp Cajun seasoning.
Cook Chicken: Heat olive oil in a large skillet over medium heat. Sauté chicken until golden and cooked through, about 5–6 minutes. Remove and set aside.
Cook Shrimp: In the same skillet, melt butter and cook shrimp until pink and opaque, 2–3 minutes per side. Remove and set aside.
Make Sauce: Lower heat to medium-low. Add garlic and sauté for 1–2 minutes until fragrant. Stir in cream, milk, Parmesan, cheddar, smoked paprika, and remaining Cajun seasoning. Stir until smooth.
Combine: Add pasta, chicken, and shrimp to the skillet. Toss everything in the sauce until evenly coated.
Adjust & Serve: Add salt and red pepper flakes to taste. Garnish with chopped parsley and serve warm.
For a lighter version, substitute half-and-half for heavy cream or use Greek yogurt. Adjust the heat by increasing or decreasing the red pepper flakes.
