CREAMY CHICKEN AND GNOCCHI

2 tablespoons olive oil or sundried tomato oil from the can
1 pound chicken breast, cut into ¾1 inch pieces
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
2 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
16 ounces gnocchi
1 teaspoon smoked paprika
⅓ cup sundried tomatoes, chopped
½ cup grated parmesan cheese
2 cups baby spinach leaves

Instructions

  1. Cook the chicken:
    In a 12-inch skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken and set aside.

  2. Make the sauce:
    In the same skillet, melt the butter and add garlic. Cook for 30 seconds until fragrant. Deglaze the pan with chicken stock, scraping up any browned bits.
    Add the heavy cream and bring to a simmer. Stir in the gnocchi and cook for 5 minutes, allowing the sauce to reduce and the gnocchi to become tender.

  3. Combine:
    Lower the heat to medium-low, add smoked paprika, sundried tomatoes, and parmesan cheese. Stir to combine.
    Add spinach and stir until wilted (you can add a splash of water if the sauce is too thick).

  4. Finish and serve:
    Add the cooked chicken back into the pan and stir everything together. Remove from heat and serve immediately.

Notes

  • You can use fresh or frozen gnocchi. Just cook frozen gnocchi according to package instructions before adding to the sauce.

  • If you prefer, substitute the chicken breast with chicken thighs for more flavor.

 

  • If the sauce is too thick, add a splash of chicken stock or water to reach your desired consistency.
