A rich and comforting twist on classic lasagna! This creamy chicken lasagna features layers of tender chicken, fresh spinach, and gooey cheese, all smothered in a luscious white sauce. It’s hearty, flavorful, and sure to be a crowd-pleaser.

Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 4 cups white sauce (see Notes)
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large bowl, combine shredded chicken, ricotta, garlic powder, Italian seasoning, salt, and pepper.
  4. In a baking dish, spread a layer of white sauce. Add 3 noodles, then half the chicken mixture, half the spinach, and a layer of mozzarella. Repeat layers: sauce, noodles, remaining chicken mixture, spinach, and mozzarella.
  5. Add final layer of noodles, pour remaining white sauce on top, and sprinkle with Parmesan.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil and bake for another 15 minutes, until golden and bubbly.
  8. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

  • White Sauce (Béchamel): Melt ¼ cup butter, whisk in ¼ cup flour to make a roux. Gradually whisk in 4 cups milk. Cook until thickened. Season with salt, pepper, and a pinch of nutmeg.
  • Add mushrooms or sun-dried tomatoes for more flavor.
  • Can be assembled ahead and baked later.
