This Creamy Parmesan Italian Sausage Soup is a rich, comforting dish packed with bold flavors. Made with savory Italian sausage, hearty kale, and a creamy Parmesan-infused broth, this one-pot soup is perfect for cozy nights. Serve with crusty bread for the ultimate comfort meal!

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 2 cups chopped kale

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

Instructions

  • Cook the sausage: In a large pot over medium heat, cook the Italian sausage until browned. Remove sausage and set aside, leaving the drippings in the pot.

  • Sauté the onion and garlic: Add diced onion to the pot and cook for about 5 minutes until softened. Stir in the minced garlic and cook for 1 more minute.

  • Add the broth and tomatoes: Pour in the chicken broth and diced tomatoes. Stir in the basil, oregano, salt, and pepper.

  • Simmer the soup: Return the sausage to the pot and bring the mixture to a gentle boil. Reduce heat and let simmer for 15 minutes.

  • Make it creamy: Stir in the heavy cream and Parmesan cheese, mixing until smooth.

  • Add the kale: Stir in the chopped kale and let cook for about 5 minutes, until wilted. Adjust seasoning as needed.

 

  • Serve and enjoy: Ladle into bowls and serve hot with extra Parmesan cheese on top, if desired.

  • For a lighter version, substitute half-and-half for heavy cream.
