  • 8 oz bowtie pasta
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream or heavy cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/4 cup reserved pasta water

Optional Garnishes:

  • Chopped parsley or chives

Instructions

  • Cook the Pasta:
    • Boil bowtie pasta according to package instructions.
    • Reserve 1/4 cup of pasta water, then drain and set aside.
  • Brown the Beef:
    • Heat olive oil in a large skillet over medium heat.
    • Add ground beef, season with salt and black pepper, and cook until browned.
    • Drain excess grease and set the cooked beef aside.
  • Sauté Aromatics:
    • In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until fragrant.
  • Prepare the Sauce:
    • Stir in the ranch seasoning mix, followed by sour cream or heavy cream.
    • Let the sauce simmer for a few minutes, then mix in the sweet corn.
  • Combine Everything:
    • Return the cooked beef to the skillet and toss with the sauce.
    • Add the cooked bowtie pasta and toss everything together.
    • If the sauce is too thick, add the reserved pasta water to loosen it.
  • Melt the Cheese:
    • Sprinkle shredded cheese over the dish, cover the skillet, and let the cheese melt for 2-3 minutes.
  • Garnish & Serve:
    • Garnish with chopped parsley or chives if desired.
    • Serve warm and enjoy!
